Creamy Mashed Cauliflower

Steamed and blended cauliflower seasoned with garlic, salt and pepper

Ingredients
  

  • 1 head organic cauliflower
  • 1 tablespoon full fat coconut milk
  • 1 tablespoon ghee
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions
 

  • Fill large pan up with water and bring to a boil. Salt the water.
  • Using a large chef knife, cut cauliflower into florets
  • Bring salted water to a boil and immerse all the cauliflower into the pan.
  • Allow cauliflower to boil until soft, about 20-30 minutes
  • Check the softness with a fork.
  • Drain water from cauliflower and transfer to vitamix
  • Add coconut milk, ghee, garlic powder, onion powder, salt and pepper
  • Blend on low in vitamix until creamy.
  • Transfer from vitamix
