Make Creamy Mashed Cauliflower, made with coconut milk and ghee, seasoned with garlic, salt and pepper. It is the BEST replacement for mashed potatoes, is gluten free, dairy free and keto friendly.
When going grain free and low carb, a few comfort foods need to be updated. Take for example, mashed potatoes, I am part Irish and from the midwest, we had potatoes every single night of the week.
This recipe combines coconut and ghee, it makes the cauliflower creamy and dreamy. This took a few iterations to get so it works out just so.
Fun fact ===> my first birthday eating clean, my mother in law made me a cauliflower cake! ha! I loved it, it was so sweet, and something I could actually eat!!!
Ingredients needed to make Creamy Mashed Cauliflower
head of cauliflower
full fat coconut milk
ghee (butter, if not dairy free)
garlic powder
onion powder
salt
pepper
Can I use frozen Cauliflower?
I am using fresh cauliflower for this recipe, I like to steam it soft and blend it so it is super creamy.
I see no reason for not using the frozen, although I have not made it this way.
Do I need a vitamix blender?
A high speed blender will ensure that the cauliflower has a creamy texture. However, a food processor, hand mixer, immersion blender will mix the cauliflower so long as it has been cooked until it is soft!
What to serve with?
The possibilities are endless, my favorites are with breakfast ground meat and vegetables.
Creamy Mashed Cauliflower

- vitamix blender
Ingredients
- 1 head organic cauliflower
- 1 tablespoon full fat coconut milk
- 1 tablespoon ghee
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Fill large pan up with water and bring to a boil. Salt the water.
- Using a large chef knife, cut cauliflower into florets
- Bring salted water to a boil and immerse all the cauliflower into the pan.
- Allow cauliflower to boil until soft, about 20-30 minutes
- Check the softness with a fork.
- Drain water from cauliflower and transfer to vitamix
- Add coconut milk, ghee, garlic powder, onion powder, salt and pepper
- Blend on low in vitamix until creamy.
- Transfer from vitamix
