This delicious cilantro cauliflower keto rice side dish is my favorite low carb keto side dish. Heck, I would even eat as a whole meal. Loaded with protein, fat and low carb it doesn’t get much better this.
Egg Fried Cauliflower Rice
Ingredients
- 1/2 tbsp ghee
- 1/2 tbsp coconut oil
- 2 tsp coconut aminos
- 1/2 tsp kosher salt
- 1 bag 14 ounce frozen riced cauliflower
- 3 pieces green onion
- 2 cloves garlic minced
- 1 each pasture raised egg
Instructions
- add ghee and coconut oil to saute pan allow to melt
- while the cooking fat is melting, chop the garlic and green onion
- soften the garlic and the green onion on medium low heat in pan
- add the frozen cauliflower to the pan and allow to absorb the fat
- add the coconut aminos and salt
- cook this down and stir until the cauliflower rice is hot and any moisture has evaporated
- push the cauliflower to the side, add a small amount of ghee then break egg and scramble in the pan.
- continue until egg is cooked through
- combine all ingredients
- top with cilantro
