Our family enjoys the occasional “ breakfast for dinner” night meal. It is a mid-week pick me up, We get jammies on early and eat a morning comfort food. It could mean simply eggs, bacon and pancakes. But, to jazz it up, I like this recipe because of all the flavors, how creamy it is and especially the low carb aspect!!

What is a Frittata
Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses or vegetables. The word frittata is Italian and roughly translates to “fried.”
Translation? It is wicked good and is easy to learn how to make. And, it is quick, one pan, easy cleanup and filling!
Ingredients used to make Sausage and Spinach Frittata
- pasture raised eggs
- full fat coconut milk (14.5 ounces)
- pork sausage
- yellow onion
- garlic powder
- nutmeg
- salt
- pepper
- spinach
- ghee (or cheese)
What is the best Pan to use for Frittatas?
Any oven safe pan! However, anytime I make this is cast iron it feels more nourishing!
Instructions to make Frittata
Start by sautéing the ground sausage in the cast iron skill (or other ovensafe skillet, like all-cald). Aside on a separate plate
Roughly rip spinach and add to pan. Allow to wilt.
Once wilted add sausage back. Add onions. Reduce heat to low.
Turn oven on broil to pre-heat.
In medium size bowl, combine eggs, spices, white onion, and coconut milk. Use whisk to combine all ingredients.
Pour egg, coconut milk, white onion and spices over sausage spinach mixture.
Allow this to cook about 5 minutes.
Put skillet in oven and allow to cook until top is set about 5 minutes.
Cut into 6 pieces and serve.
