The BEST Egg-free Italian meatball recipe that is kid friendly. Our family loves this easy to make meal using ground turkey, almond flour and spices.
I have used and morphed this recipe over the past 6 years. There was a time I could not use eggs and using this replacement method gave me something I could use in place of the standard and oft called for delightful egg. This version, is about as close to a quick “pantry” weeknight meal.
Egg replacement
When you are looking for egg replacement, this is a useful trick and gives a good binder when a recipe calls for 3 or less eggs. If you use more than that, it doesn’t bake as well and can leave ingredients a bit “soggy.
The only thing you need to bring here is patience and waiting 5 minutes to allow the flaxmeal to react with the water. It will be a gelatinous mixture that will bind your meatballs together. It’s worth mixing it in a separate container and allowing it to react properly.
Ingredients
ground turkey – I use the 7% fat
flaxmeal – super finely ground like this one.
almond flour – super finely ground. I find the more finely ground it is, the better the overall recipe comes out. In both paleo and keto baking, the grind will definitely affect.
basil
parsley
oregano
salt
pepper
onion powder
garlic powder
I find that when using “powder” spices, there is nothing added to the bottle other than the spice. Avoid combination type spices as many contain “anti caking” ingredients that can irritate a sensitive digestive system.
