Egg Fried Cauliflower Rice

Ingredients
  

  • 1/2 tbsp ghee
  • 1/2 tbsp coconut oil
  • 2 tsp coconut aminos
  • 1/2 tsp kosher salt
  • 1 bag 14 ounce frozen riced cauliflower
  • 3 pieces green onion
  • 2 cloves garlic minced
  • 1 each pasture raised egg

Instructions
 

  • add ghee and coconut oil to saute pan allow to melt
  • while the cooking fat is melting, chop the garlic and green onion
  • soften the garlic and the green onion on medium low heat in pan
  • add the frozen cauliflower to the pan and allow to absorb the fat
  • add the coconut aminos and salt
  • cook this down and stir until the cauliflower rice is hot and any moisture has evaporated
  • push the cauliflower to the side, add a small amount of ghee then break egg and scramble in the pan.
  • continue until egg is cooked through
  • combine all ingredients
  • top with cilantro
